Special notes

Château Chasse-Spleen is one of the most famous vineyards in Bordeaux. Ranked as an Exceptional Cru Bourgeois since 2003. The domain is located at the edge of Moulis, south of Saint-Julien. The vineyards extend past the edge of the commune of Arcins, in the direction of Pauillac, on the left side of the Route des Châteaux. Along with Chateau Poujeaux, it is one of the best wine producers in Moulis. The property covers 110 hectares, of which about 80 are planted with vines, making it one of the largest vineyards in town. It covers the highest point of the hilltop in the hamlet of Le Grand Poujeaux, the best growing area in the Moulis appellation. The hilltop was formed during the Günz ice age. Château Chasse-Spleen produces red wine, almost exclusively. The vineyard is planted with Cabernet Sauvignon (73%) mainly, Merlot (20%), Petit Verdot (7%) and a small amount of Sauvignon Blanc. The average age of the vines is 30 years. Winemaking follows the traditional Bordeaux methods, with a first fermentation of three to five weeks in concrete and stainless steel temperature controlled vats, malolactic fermentation and then aged for 15-18 months in 40% new barrels. The domain is one of the few to refuse filtration, not after the """malo"""" nor before bottling. Overall, the wine is made using traditional methods. The automatic collection of the grapes is the only mechanical compromise agreed to in the evolution of the tradition.
