The Chateau Beychevelle's second wine, on average one third of this domain's crop and is one of the most famous in the Bordeaux region. Since the introduction of the classification in 1855, it ranks in the category of Quatrième Grand Cru Classé, which is the fourth highest rank. With a total area of 250 hectares, the Château Beychevelle has 90 hectares of vineyards, and produces only the AOC red wine called Saint-Julien. Of these 90 hectares, 62% are devoted to Cabernet Sauvignon, 31% to Merlot, 5% Cabernet Franc and 2% to Petit Verdot. With an average age of 25 years, the vines are planted at a very high density of 10,000 plants/hectare. After alcohol fermentation at a controlled temperature below 30°C, the wine is kept in barrels for 18 months, of which 50% are changed each year. Before bottling, the wine is only clarified, and left unfiltered. Some 300,000 bottles of great wine are produced each year. Regarding the domain's second wine, the Admiral Beychevelle, 150,000 bottles are put on the market in a normal year. Some parcels in thevicinity of Saint-Julien produce grapes used for wine making called Brulières of Beychevelle marketed as Haut-Medoc, à general appellation.
