  • Chicken Preparation
  • 2 chicken (je ca. 800 g)
  • Marinade
  • 1 dl beer
  • 2 lemon
  • 2 tbsp. maple syrup
  • Grilling
  • 1 tsp. salt
  • Gremolata
  • 0.5 bunch flat-leaf parsley, finely chopped
  • 1 garlic cloves, finely chopped
  • 1 pinch salt
  • a little pepper

  • Chicken Preparation

    Rinse the chickens (inside and out) in cold water, pat dry. Remove the backbones and flatten from the breast side.
  • Marinade

    Grate the lemon zest, set aside for the Gremolata, squeeze out the juice. Combine the lemon juice, beer and maple syrup. Coat both chickens with half of the marinade, cover and leave to marinate in the fridge for approx. 1 hr.
  • Grilling

    Wipe away the marinade and season with salt. Charcoal/gas/electric barbecue: Grill the chickens over/on a medium heat (approx. 150°C) for approx. 1 hr., turning them from time to time and coating them with the remaining marinade.
  • Gremolata

    Mix the parsley, garlic and reserved lemon zest, season. Serve with the chickens.
