  • 2 chicken (je ca. 800 g)
  • 3 tbsp. oregano leaves
  • 0.5 Organic lemon, a little grated zest and 1/2 tbsp of juice
  • 2 tbsp. ketchup
  • 1 tsp. Worcestershire sauce
  • 2 clove of garlic
  • 4 tbsp. olive oil
  • 3 drops red Tabasco sauce
  • 1.5 tsp. salt


  • Rinse the chickens (inside and out) in cold water, pat dry. Remove the backbones and flatten from the breast side.
  • Finely chop the oregano, press the garlic, grate the zest from the lemon and press out the juice. Mix everything with the oil, ketchup, Worcestershire sauce and Tabasco. Coat the chickens with half of the marinade, cover and leave to marinate in the fridge for approx 1 hr.
  • Charcoal/gas/electric barbecue: Salt the chickens to season, then grill over/on a low heat (approx. 150°C), covered, for approx. 1 hr, turning the chickens 3-4 times and applying the rest of the marinade. Serving suggestion: potato wedges, green salad.
