Ingredients

  • Apple and cashew spread
  • 1 apples, peeled, cut into cubes
  • 1 tbsp water
  • 1 cinnamon stick
  • 1 tsp lemon juice
  • 100 g cashew nuts, immersed in water for approx. 1 hr., drained
  • 8 rice cakes rice cakes
  • 1 tbsp maple syrup
  • Polar bear
  • 3 tbsp coconut flakes
  • 0.5 banana, sliced
  • 12 blueberries
  • Snow owl
  • 0.5 banana, sliced
  • 1 apples, sliced
  • 12 blueberries
  • 2 tbsp flaked almonds

Instructions

  • Apple and cashew spread

    Bring the apple, water, lemon juice and cinnamon stick to the boil, cover and simmer for approx. 10 mins., allow to cool, remove the cinnamon stick. Mix the apple sauce with the cashew nuts and maple syrup in a blender until a creamy mixture forms. Spread the mixture onto the rice cakes.
  • Polar bear

    Scatter desiccated coconut onto 4 rice cakes, create a polar bear face with banana and blueberries.
  • Snow owl

    On the remaining rice cakes, use the banana, blueberries, apple slices and flaked almonds to turn each one into a snow owl.
