  • Strudel Nests
  • 1 bag strudel dough (120 g)
  • 3 tbsp. olive oil
  • Mango Filling
  • 1 mango, cut into small cubes
  • 0.25 tsp. salt
  • 150 g sour single cream
  • 1 red chili, insides removed, finely chopped
  • 1 lime heiss abgespült, trocken getupft, wenig Schale und 1 EL Saft
  • 1 tbsp. olive oil
  • Cooking the shrimp
  • oil to fry
  • coriander leaves (cilantro)
  • 400 g organic peeled raw prawns, 4 cm eingeschnitten
  • 0.5 tsp. salt
  • Utensils
  • Für ein Muffinsblech mit 12 Vertiefungen von je ca. 7 cm Ø, gefettet

  • Strudel Nests

    Carefully unfold the strudel pastry, brush with a little oil, stack all the sheets on top of each other, cut into 12 squares. Place the pastry squares on the prepared baking tray.
  • Mango Filling

    Bake for approx. 8 mins. in the lower half of an oven preheated to 220°C. Remove from the oven, allow to cool a little, remove from the tray, leave to cool.
  • Cooking the shrimp

    Mix the cream and salt, divide among the strudel nests. Mix the mango with all the other ingredients up to and including the oil, spoon on top of the crème. Heat a little oil in a non-stick frying pan. Fry the prawns in batches for approx. 2 mins. each, season with salt, arrange on top of the filling. Sprinkle the coriander on top.
  • Tipp:

    Vegetarische Variante: für 6 Stück: 200 g gemischte Pilze (z.B. Champignons, Eierschwämme), halbiert, in 1 El heissem Öl braten. 1/2 Bund glattblättrige Petersilie, fein geschnitten und 1/4 TL Salz daruntermischen. Auf den Nestli verteilen.
