Ingredients

  • Apple Topping
  • 2 tbsp. sugar
  • 4 apples, cut into quarters
  • 2 tbsp. apple juice
  • einige knobs of butter
  • 0.5 tsp. cinnamon
  • Guss
  • 3 fresh egg yolks
  • 2 EL sugar
  • 0.5 TL vanilla sugar
  • 1 organic lemons, abgeriebene Schale und ganzer Saft
  • 2 EL white flour
  • 3 fresh egg whites
  • 1 Prise salt
  • Fertig backen
  • wenig icing sugar zum Bestäuben
  • Utensils
  • Für eine ofenfeste Form von ca. 2 Litern, gefettet

Instructions

  • Apple Topping

    Mix the apples, sugar, cinnamon and apple juice, transfer to the prepared tin. Top with several knobs of butter. Bake for approx. 15 mins. in the centre of an oven preheated to 200°C.
  • Egg Glaze

    Beat the egg yolks and sugar for approx. 5 mins. using the whisk on a hand mixer. Grate in the lemon zest, squeeze in the juice, add the vanilla sugar and flour, mix. Beat the egg whites with the salt until stiff. Add the sugar, beat briefly, fold into the egg yolk mixture, spread on top of the apples. Bake for a further 10 mins., remove and dust with icing sugar.
  • Guss

    Eigelbe und Zucker mit den Schwingbesen des Handrührgeräts ca. 5 Min. rühren. Zitronenschale und - saft mit dem Vanillezucker und Mehl beigeben, verrühren. Eiweisse mit dem Salz steif schlagen. Zucker beigeben, kurz weiterschlagen, mit dem Gummischaber, unter die Eigelbmasse ziehen, auf den Äpfeln verteilen.
  • Fertig backen

    Ca. 10 Min. Herausnehmen, mit Puderzucker bestäuben.
