Ingredients

  • Filling
  • 120 g edamame
  • 1 spring onions, including green parts, in feinen Ringen, Grün beiseite gestellt
  • 1 tbsp. soya sauce
  • 0.5 tbsp. rice vinegar
  • 1 tsp. chili flakes
  • Escalopes
  • 8 thin veal escalope (je ca. 80 g), flach geklopft
  • 0.75 tsp. salt
  • 4 stick lemongrass, cut in half
  • 1 tbsp. peanut oil
  • Sauce
  • 1 lime
  • 1 tsp. rice vinegar
  • 0.5 tbsp. toasted sesame oil
  • 120 g edamame, abgetropft, abgespült
  • 1 tsp. soya sauce
  • 1 tsp. sesame seeds

Instructions

  • Filling

    Purée the edamame, and mix in the white of the spring onions and all the other ingredients up to and including the chilli flakes.
  • Escalopes

    Season the steaks. Place 1/8 of the filling onto each steak, and place 1 lemongrass stick on top of each one. Roll up the steaks, secure with toothpicks, and season. Heat the oil in a frying pan and fry the meat rolls in batches all over, over a medium heat, for approx. 5 mins.
  • Sauce

    Combine the lime and all the other ingredients up to and including the soy sauce, then mix in the edamame, green from the spring onion, and the sesame seeds. Serve with the meat rolls.
