  • Pasta
  • 500 g spaghetti
  • 90 g arugula
  • saltwater, siedend
  • 1 tbsp. olive oil
  • Sauce
  • 2 tbsp. olive oil
  • 2 spring onions, including green parts, in feinen Ringen
  • 500 g aubergines, in ca. 1 cm grossen Würfeln
  • 0.5 tsp. sea salt
  • 2 tbsp. liquid honey
  • 50 g pine nuts, geröstet
  • a little pepper
  • Presentation
  • 2 Burrata (je ca. 150 g), halbiert

  • Pasta

    Cook the pasta in salted water until al dente, drain. Stir in the arugula and oil, set aside.
  • Sauce

    Heat the oil in a non stick frying pan. Sauté the eggplant for approximately 5 minutes. Add the onion, honey and pine nuts and combine, season with salt and pepper.
  • Presentation

    Arrange the spaghetti on a plate and spread the eggplant and burrata on top.
