  • Aubergines
  • 1 aubergines (ca. 350 g), längs in ca. 3 mm dicken Scheiben
  • 2 tbsp. olive oil
  • 0.25 tsp. salt
  • a little pepper
  • Filling
  • 150 g cream cheese
  • 50 g arugula
  • 80 g dried tomatoes, cut in half lengthways

  • Aubergines

    Place the aubergine slices on an oven tray lined with baking paper, coat on both sides with a little oil, season. Bake for approx. 20 mins. in the centre of an oven preheated to 220°C. Remove the aubergine slices and allow to cool a little.
  • Filling

    Spread 2 teaspoons of cream cheese onto each of the aubergine slices, place the rocket and tomato on top, roll them up.
