  • Aubergines
  • 2 aubergines, längs halbiert, kreuzweise eingeschnitten
  • 4 tbsp. olive oil
  • Baba Ganousch
  • 1 organic lemons, wenig abgeriebene Schale und 1 EL Saft
  • 50 g cashews, roasted, coarsely chopped
  • 1 garlic cloves, pressed
  • 1 tbsp. peppermint, coarsely chopped
  • 1 tbsp. parsley, coarsely chopped
  • 1 tbsp. coriander, coarsely chopped
  • 0.5 tsp. salt
  • 1 tbsp. olive oil
  • a little pepper

  • Aubergines

    Brush the aubergines with oil, place on top of each other with the flesh-side facing inwards, wrap in foil. Charcoal/gas/electric barbecue: Cover and grill the aubergines over/on a very high heat (approx. 250°C) for approx. 20 mins. on each side.
  • Baba Ganousch

    Scrape the aubergine flesh away from the skin using a spoon, transfer to a measuring cup, puree. Add the nuts and all the remaining ingredients, mix.
  • Passt zu:

    grilliertem Brot, Cracker, rohen Gemüsestängeli.
