Bacon Feast with Potato Mash

  • 100 g dried beans
  • 500 g smoked boiled bacon
  • 0.5 onion, decorated
  • 2.5 dl meat bouillon
  • 50 g dried apple rings
  • salt and pepper to taste
  • 2 clove of garlic, pressed
  • a little butter
  • 1 tbsp. dried savoury
  • 7.5 dl water
  • 1 tsp. salt
  • 500 g mealy potatoes, cut into pieces

  • Soften the dried green beans, covered, in cold water for approx. 12 hours, drain. Heat up the butter in a large pan. Sauté the onions and garlic. Add the beans and sauté. Add the savory. Add the stock and water, bring to the boil, reduce the heat. Divide the bacon over, cover and simmer for approx. 45 mins. Stir in the apple rings, simmer for approx. 30 mins. until cooked. Remove the bacon, slice, season the beans and apple rings.
  • Bring the water to the boil with the studded onions, season with salt. Add the potatoes, reduce the heat. Cook the potatoes, uncovered, in boiling salted water for approx. 20 mins. until soft, drain very well, remove the onions.
