  • Feta and tomatoes
  • 300 g feta
  • 1 spring onions incl. green parts, cut into rings
  • 4 garlic clove, halved
  • 1 organic lemon, use grated zest only
  • 4 sprigs thyme, roughly chopped
  • 4 sprigs oregano, roughly chopped
  • 500 g tomato (different varieties) whole or chopped
  • 0.5 dl olive oil
  • 3 tbsp Kalamata olives
  • 2 pinches chilli flakes
  • salt and pepper to taste

  • One shallow baking dish, greased.

  • Feta and tomatoes

    Place the feta in the prepared dish. Scatter the spring onions, garlic, lemon zest and herbs on top. Place the tomatoes and olives in the dish, drizzle with oil, season.
  • Bake

    For approx 20 mins. in the centre of an oven preheated to 200°C.
  • Serve with:

    Baguette or pita bread.
