Ingredients

  • Ice cream
  • 5 dl full cream
  • 1 fresh egg white
  • 70 g sugar
  • 1 pinch salt
  • 100 g Basler Leckerli (gingerbread biscuits), finely chopped
  • Stewed apples
  • 1 tbsp sugar
  • 2 apples, cut into cubes
  • 1 cloves
  • 1 star anise
  • 2 tbsp sour cherry jam
  • 1 tbsp kirsch (e.g. Baselbieter Kirsch)
  • 2 tbsp water

Instructions

  • Ice cream

    Bring 200 ml of cream and sugar to the boil, allow to cool. Whip the remaining cream until stiff, add the cooled cream. Cover and freeze for approx. 2 hrs., stirring twice. Beat the egg whites with the salt until stiff, stir in with the Basler Läckerli to the frozen mixture, freeze again for approx. 2 hrs., stirring twice.
  • Stewed apples

    Place apples, sugar, water, cloves and star anise into a pan, cover and simmer for approx. 5 minutes. Add the jam and kirsch, simmer for approx. 1 min., allow to cool a little. Remove the cloves and star anise.
  • To serve

    Transfer the Läckerli ice cream to the fridge approx. 30 mins. prior to serving. Scoop the ice cream into dishes, serve with lukewarm stewed apples.
  • Tip:

    Just before serving, sprinkle some finely chopped Basler Läckerli over the ice cream.
