  • Marinade
  • 1 tbsp tomato puree
  • 0.5 tsp ginger, finely grated
  • 1 garlic clove, pressed
  • 1 tbsp sherry
  • 0.5 tbsp liquid honey
  • 2 tbsp soy sauce
  • 0.25 tsp cayenne pepper
  • 1 pinch cinnamon
  • 0.25 tsp mustard seeds, crushed
  • 1 pinch ground cloves

  • Marinade

    Mix the tomato puree with all the other ingredients.
  • Tip:

    Cover half of the marinade and place in the fridge. Coat approx. 600 g of meat (e.g. steaks or cutlets) or chicken with the remaining marinade and leave in the fridge to marinate for approx. 3 hours. Wipe off the marinade, season the meat, barbecue and coat with the reserved marinade after barbecuing.
