Ingredients

  • Meat
  • 2 tbsp. olive oil
  • 300 g ground beef and pork
  • 1 garlic cloves, finely chopped
  • 1 red pepper, cut into small cubes
  • 1 onion, finely chopped
  • 2 tomatoes, in Würfen
  • 1 tin corn kernels (ca. 300 g), abgespült, abgetropft
  • 100 g sliced jalapeños in oil, abgetropft, in Scheiben
  • 1 tbsp. flat-leaf parsley, finely chopped
  • 1.5 tsp. paprika
  • 0.25 tsp. curry powder
  • 1 tsp. salt
  • a little pepper
  • Rice
  • 2 dl Water
  • 0.5 tsp. salt
  • 120 g basmati rice
  • Garnishing the tortillas
  • 4 wheat tortillas
  • 100 g crème fraîche
  • 150 g cheddar, coarsely grated

Instructions

  • Meat

    Heat the oil in a skillet and brown the meat for approximately 3 minutes. Reduce the heat, add the onion, garlic and the pepper and continue cooking for approximately 3 minutes. Add tomatoes and corn and simmer for approximately 3 minutes. Add the jalapeno peppers and the parsley and season.
  • Rice

    Pour the rice and water in a saucepan, cover, bring to a boil and add salt. Cook for approximately 3 minutes. Take the pan off the heat, let the rice puff up for approximately 12 minutes without taking the lid off.
  • Garnishing the tortillas

    Spread the stuffing in the center of the tortillas, add the rice, cheddar and cream. Fold one side of the tortilla and roll it up, serve immediately.
