Ingredients

  • 150 g boiled beets, diced
  • 2.5 tbsp cane sugar
  • 1 tbsp water
  • 50 g pitted prunes, finely chopped
  • 300 g macadamia nuts, finely chopped

Instructions

  • Puree the beetroot, sugar and water in a pan, bring to the boil and then simmer for approx. 3 mins. while stirring. Add the plums, continue to simmer for approx. 5 mins., leave to cool. Combine the mixture with 200 g of the nuts. With wet hands, shape 20 balls and roll them in the remaining nuts.
