Cheese Salad with Valais Bread

  • 1 tbsp. clarified butter
  • 250 g rye bread, cut into 1-cm cubes
  • 1 onion, cut into thin strips
  • 30 g walnuts, coarsely chopped
  • 150 g mountain cheese (e.g. Gomser), cut into small cubes
  • 1 pears, cut into small cubes
  • 50 g dried meat (jerky), cut into strips
  • 0.5 tbsp. mustard
  • 4 tbsp. apple vinegar
  • 0.5 tsp. salt
  • 6 tbsp. rapeseed oil
  • a little pepper
  • 100 g lambs’ lettuce

  • Heat the butter in a frying pan and fry the bread and nuts for approx. 5 mins. until crisp all over. Mix the onions with the dried meat. Combine the mustard, vinegar and oil, season. Mix the dressing with the bread salad and serve with the nut salad.
