  • 1 organic lemon
  • 2 tbsp. raw sugar
  • 60 g durum wheat semolina
  • 3 dl milk
  • 400 g cherries
  • 1 tbsp. lemon juice
  • 1 tbsp. icing sugar
  • 50 g wholemeal biscuits
  • 1 tbsp. peppermint, finely chopped

  • Grate the zest from the lemon, add it to the milk in a pan, bring to the boil. Stir in the semolina, simmer for approx. 3 mins. over a low heat, stirring continuously to form a paste. Stir in the sugar, divide the contents between 4 glasses (approx. 250 ml each), smooth down, leave to cool.
  • Pit the cherries, mix them with the icing sugar, lemon juice and mint, then spread onto the semolina.
  • Chop the biscuits and mix them with the sugar. Caramelize the biscuit mixture in a non-stick frying pan until golden brown, before scattering it over the cherries.
