  • Chicken
  • 800 g chicken legs, in Ober- und Unterschenkel geteilt
  • 1 tsp. salt
  • 1 tbsp. olive oil
  • 0.5 tsp. ground cumin
  • Sauce
  • 2 dl coconut milk
  • 1 tin chopped tomatoes (ca. 100g)
  • 1 dl sweet chili sauce
  • 2 garlic cloves, cut into slices
  • 2 spring onions, including green parts, cut into rings
  • 1 stick lemongrass, zerquetscht
  • 0.75 tsp. salt
  • Topping
  • 1 bunch coriander, broken into pieces
  • 1 mango, in 1 cm grossen Würfeln

  • Chicken

    Mix the oil with the salt and cumin, coat the chicken pieces in the seasoned oil. Heat up the cooking pot, fry the chicken for approx. 3 mins. on each side.
  • Sauce

    Add the coconut milk, chopped tomatoes & sweet chilli sauce to the chicken, season with salt, bring to the boil. Stir in the spring onions, garlic and lemongrass, cover and cook on a medium heat for approx. 20 mins., stirring occasionally. Remove the lid and continue to cook for approx. 20 mins. Remove the lemongrass.
  • Topping

    Shortly before serving, stir in the mango and coriander.
