Chicken wings with Caramel Sauce

  • 3 tbsp. sugar
  • 2 tbsp. water
  • 1 dl chicken bouillon
  • 2 tbsp. fish sauce
  • 1 onion
  • 1 cm ginger
  • a little pepper
  • 800 g chicken wings

  • Boil the sugar and water in a stainless steel pan without stirring. Reduce the heat and simmer, shaking the pan occasionally until a brown caramel forms. Remove the pan from the heat, add the stock and fish sauce.
  • Finely chop the onions, grate the ginger and add to the pan, cover and continue to simmer until the sugar has dissolved.
  • Add the chicken wings and stock, mix well, bring to the boil, reduce the heat. Cover and cook on a low heat for approx. 25 mins. Remove the lid and cook over a medium heat until the sauce has a glutinous consistency, season.
