  • 4 short wooden skewers
  • 1 charentais melon (ca. 900 g)
  • 3 tbsp. white port
  • 2 tsp. lemon juice
  • 1 tbsp. liquid honey
  • 1 pinch salt
  • a little pepper
  • some lemon balm leaves

  • Halve the melon, remove the seeds, and use a melon baller to scoop out 12 balls. Thread 3 balls on each skewer and set aside. Remove the remaining melon with a spoon and puree it finely with the port, lemon juice, honey and salt. Chill for approx. 2 hrs. Stir the soup well, divide among the glasses and place a melon skewer in each. Sprinkle a little pepper on each serving and garnish with lemon balm.
