Ingredients

  • 2 tbsp. olive oil
  • 2 dl vegetable bouillon
  • 500 g tomatoes, cut into pieces
  • 2 tsp. apple vinegar
  • pepper to taste
  • 1 tsp. salt
  • 1 tbsp. basil, cut into thin strips
  • 1 onion, coarsely chopped
  • 2 clove of garlic, coarsely chopped
  • 0.5 charentais melon
  • 50 g Carrés mit Dinkel (spelt biscuits)

Instructions

  • Heat the oil, sauté the onion and garlic for approx. 5 mins., place in a tall container and allow to cool a little. Using a melon baller, cut 12 balls out of the melon, cover and chill to use as a garnish. Cut the remaining melon into chunks (yields about 150 g) and add with the tomatoes to the onions. Pour in the stock, puree, strain, season and chill for about an hour. Plate up the chilled soup, garnish with melon balls, basil and spelt carrés.
