  • 1 pack vegetarian mince (230 g)
  • tbsp olive oil
  • 1 tin red kidney beans, rinsed, drained (approx. 215 g)
  • 1 tin corn kernels drained (approx. 140 g)
  • 1 onions, finely chopped
  • 1 garlic clove, pressed
  • 2 tomato, diced
  • 1 red chilli, deseeded, cut into thin strips
  • 1 dl vegetable bouillon
  • 2 tsp chilli powder
  • 0.25 tsp salt
  • 0.25 tsp cumin, ground
  • tortilla chips

  • Heat the oil in a frying pan, brown the mince for approx. 4 mins. Add the onions, garlic, beans, sweetcorn, tomatoes and chilli, fry for about a minute, reduce the heat. Pour in the stock, season, cover and simmer for approx. 3 mins.
  • Serve:

    Serve with tortilla chips or rice.
