  • 3 dl full cream
  • 2 dl milk
  • 2 fresh eggs
  • 100 g sugar
  • 1 vanilla pod, längs aufgeschnitten, nur ausgekratze Samen
  • 50 g unsalted, shelled pistachios
  • 50 g sponge fingers, finely chopped
  • 100 g dark chocolate (70% cocoa), coarsely chopped
  • 8 pralines with nuts (Fine Food Tartufi Nocciolati), fein gehackt

  • Place the cream and all the remaining ingredients including the vanilla seeds in a pan, combine with a whisk and bring to just below the boil, stirring constantly. Remove the pan from the hob immediately, continue to stir for approx. 2 mins. Pour the crème through a sieve into a bowl. Reserve half of the crème. Add the chocolate to the remaining half, combine, pour into the prepared bowl, leave to cool, cover and freeze for approx. 2 hours.
  • Using a cutter, finely grind or finely chop the pistachios, mix into the reserved crème, pour onto the frozen chocolate mixture, cover and freeze for approx. 5 hours.
  • Remove the parfait, leave to stand for approx. 15 mins., tip out onto a plate. Scatter the pralines and sponge fingers over the parfait, serve immediately.
