  • 150 g butter
  • 1 eggs
  • 0.25 tsp. salt
  • 1 tbsp. cocoa powder
  • 100 g dark chocolate, coarsely chopped
  • 75 g sugar
  • 75 g cashews, coarsely chopped, roasted, cooled
  • 150 g white flour
  • 2 red chilli, insides removed, finely chopped
  • 0.5 tsp. baking powder
  • a little sea salt

  • In a small bowl, beat the butter until soft. Stir in the sugar and salt. Add the eggs and continue to beat until the mixture turns paler in colour. Add the cocoa powder and continue beating for a moment. Add the chocolate, nuts and chillies and stir in. Mix the flour and baking powder and stir in. Spoon the mixture onto two oven trays lined with baking paper, 1/2 tbsp per cookie. Using the back of a wet spoon, flatten the cookies a little.
  • Bake for approx. 10 mins. in the lower half of an oven preheated to 20\0°C. The cookies should still be moist after baking. Remove, sprinkle over a little Fleur de Sel and allow to cool on a cooling rack.
