Ingredients

  • Hazelnut Caramelization
  • 1 tbsp. sugar
  • 50 g hazelnuts, coarsely chopped
  • Chocolate Mousse
  • 150 g dark chocolate (64 % Kakao, Cailler), fein gehackt
  • 2 fresh egg yolks
  • 2 dl lactose free cream, whipped until stiff
  • 1 tbsp. sugar
  • 2 tbsp. strong espresso, cooled down
  • 2 fresh egg whites
  • 1 pinch salt
  • Decoration
  • 1 dl lactose free cream
  • Utensils

Instructions

  • Hazelnut Caramelization

    Combine the nuts and sugar in a pan, stir and toast on a medium heat for approx. 5 mins. until golden brown.
  • Chocolate Mousse

    Place the chocolate in a thin-sided bowl and suspend over the gently simmering bain-marie
  • Decoration

    Beat the cream until light and fluffy, top the mousse with the nuts and cream.
