  • 100 g chocolate ice cream, defrosted
  • 2 tbsp unsalted, shelled pistachios, roughly chopped
  • 8 biscuits (e.g. chocolate cookies)
  • Chocolate glaze
  • 1 bag dark cake icing (approx. 125 g), melted
  • 1 tbsp unsalted, shelled pistachios, roughly chopped

  • Ice cream sandwiches

    Mix the ice cream with the pistachios. Spoon approx. 2 tbsp of ice cream onto 4 separate biscuits, top with the remaining biscuits. Freeze the biscuit sandwiches for approx. 30 mins.
  • Chocolate glaze

    Dip the ice cream sandwiches halfway into the glaze, sprinkle with pistachios, dry for approx. 2 mins. on a rack. Freeze for a further 30 mins.
