Ingredients

  • 125 g butter
  • 75 g liquid honey
  • 1 pinch salt
  • 0.5 tsp. cinnamon
  • 1 eggs
  • 100 g ground hazelnuts
  • 225 g spelt flour
  • 0.25 tsp. baking powder
  • Stack
  • 2 cinnamon stick
  • icing sugar to dust

Instructions

  • Beat all the ingredients up to and including the egg for approx. 5 mins. using the whisk on a hand mixer. Add the remaining ingredients and mix to create a soft dough, knead briefly. Cover and leave to chill for approx. 30 mins. To shape, roll out the dough into a rectangle of approx. 18 x 24 cm. Cut lengthways into three strips of different widths (approx. 7 cm, 6 cm, 5 cm). Cut the bottom strip into triangles. Using the smooth nozzle of a piping bag, cut out holes of approx. 12 mm in diameter. Place the triangles onto a tray lined with baking paper. Repeat the process with the two other strips. Bake for 12-15 mins. in the centre of an oven preheated to 180°C.
  • Stack

    Place the biggest biscuits onto the cinnamon stick first, then the medium-sized biscuits and finally the smallest biscuits. Dust with icing sugar.
