  • 1 pinch salt
  • 1 tbsp. sugar
  • 100 g white flour
  • 4 eggs
  • 200 g butter, soft
  • 2 tsp. baking powder
  • 120 g coconut flakes
  • 1 dl coconut milk
  • 1 dl full-cream milk
  • 1.5 tbsp. instant coffee
  • a little icing sugar to dust

  • In a small bowl, stir the butter until soft. Stir in the sugar and salt, then stir in the eggs one after the other, continue stirring until the mixture is pale in colour. Mix the flour and baking powder, stir in the mixture, divide the batter into two portions. Alternately stir the coconut flakes and coconut milk into half the batter and pour into the prepared tin. Bring the milk to the boil with the coffee and sugar, leave to cool. Stir into the other half of the batter, alternately with the flour, and divide onto the pale batter.
