Ingredients

  • 150 g carrots, cut into sticks
  • 250 g parsnips, cut into sticks
  • 1.5 tbsp. sunflower oil
  • tsp. salt
  • a little pepper
  • 4 baking parchment
  • 4 Nordstar cod fillets, (approx. 120 g each) MSC-approved
  • 2 tbsp. white wine
  • kitchen twine
  • 2 tbsp. pesto verde
  • 350 g salsify, cut in half lengthways if necessary, and then into 3-cm-long pieces
  • 200 g frozen peas, defrosted

Instructions

  • Mix the parsnips with a little oil, season. Salt the fish fillets. Press 1 sheet of baking paper into a soup bowl. Put 1/4 of the vegetables in the bowl. Place 1 cod fillet on top and drizzle with wine. Fold in the thin end of the fish fillet. Shape the baking paper into a parcel, tie with cooking string and place on an oven tray. Repeat the process three times.
  • Bake for approx. 30 mins. in the centre of an oven preheated to 200°C.
