  • 1 dl fish stock
  • a little pepper
  • 4 Royal cod fillets (MSC) (approx. 160 g each)
  • 2 tbsp white wine
  • 0.5 tsp salt
  • Crust
  • 3 tbsp sunflower oil
  • 0.5 bunch parsley, finely chopped
  • 100 g unsalted pistachios
  • 0.5 bunch chervil, finely chopped
  • 0.25 tsp salt
  • 1 tbsp breadcrumbs
  • a little pepper

  • For a wide ovenproof dish of approx. 1.5 litre capacity

  • Pour the fish stock and wine into the dish, season. Salt the fish fillets and transfer to the dish.
  • Crust

    Briefly puree the oil, pistachios and herbs, stir in the breadcrumbs, season. Divide the mixture onto the fish pieces. Bake for approx. 15 mins. in the centre of an oven preheated to 220°C.
  • Serve with:

    Potatoes or dry rice.
