Ingredients

  • Marinade
  • 2 dl Coca-Cola
  • 2 tbsp. soya sauce
  • 2 tbsp. ketchup
  • 2 tbsp. honey
  • 1 tsp. sambal oelek
  • 1 tsp. salt
  • Marinate
  • 2 rack of pork spareribs
  • Apple Salad
  • 4 green apples, cut into thin slices
  • 20 g watercress
  • 1.5 tbsp. olive oil
  • 1 tbsp. lemon juice
  • 2 pinches salt
  • a little pepper

Instructions

  • Marinade

    Boil the Coca Cola in a large pan without stirring. Turn down the heat and reduce to approx. 3 tbsp. Add the soy sauce and all the other ingredients up to and including the salt, simmer for approx. 15 mins., leave to cool.
  • Marinate

    Brush the spare ribs with 3/4 of the marinade, cover and allow to marinate for approx. 1 hr. Set aside the remainder of the marinade. Place each spare rib on a sheet of foil. Fold the foil to form a parcel.
  • Grilling

    Charcoal/gas/electric barbecue: Cover and grill the spare ribs for approx. 40 mins. over/on a medium heat (approx. 200°C). Remove from the grill, remove the foil, brush with the reserved marinade. Grill the spare ribs over/on a medium heat (approx. 200°C) for approx. 7 mins. on each side. Brush every so often with the remainder of the marinade.
  • Apple Salad

    Place the apple slices in a bowl, add the remaining ingredients and mix well. Serve with the spare ribs.
