  • Marinade
  • 2 dl Coca Cola
  • 2 tbsp soy sauce
  • 2 tbsp ketchup
  • 2 tbsp honey
  • 1 tsp sambal oelek
  • 1 tsp salt
  • To marinate
  • 2 rack of pork spare ribs
  • Apple salad
  • 4 green apples, thinly sliced
  • 20 g garden cress
  • 1.5 tbsp olive oil
  • 1 tbsp lemon juice
  • 2 pinches salt
  • a little pepper

  • Marinade

    Boil the Coca Cola in a large pan without stirring. Turn down the heat and reduce to approx. 3 tbsp. Add the soy sauce and all the other ingredients up to and including the salt, simmer for approx. 15 mins., leave to cool.
  • To marinate

    Brush the spare ribs with 3/4 of the marinade, cover and allow to marinate for approx. 1 hr. Set aside the remainder of the marinade. Place each spare rib on a sheet of foil. Fold the foil to form a parcel.
  • To grill the peaches

    Remove from the grill, remove the foil, brush with the reserved marinade. Grill the spare ribs over/on a medium heat (approx. 200°C) for approx. 7 mins. on each side.
  • Apple salad

    Place the apple slices in a bowl, add the remaining ingredients and mix well. Serve with the spare ribs.
