Ingredients

  • 3 dl pear juice
  • 0.5 vanilla pod, cut open lengthways, seeds scraped out
  • 1 tbsp. sugar
  • 1 cloves
  • 0.25 organic lemon, use grated zest only
  • 1 pears, cut into 5-mm cubes
  • 5 saffron threads
  • 2 leaves gelatine, immersed for approx. 5 mins in cold water, drained
  • 0.5 Williamstorte (chocolate-pear cake)

Instructions

  • Heat the pear juice, vanilla seeds and pods, sugar, cloves and lemon zest, steep for approx. 5 mins, pour through a sieve and return to the same pan. Add the pear to the liquid with the saffron, simmer for about 2 mins. over a medium heat. Add the gelatine, stir. Divide the consommé into glasses and chill for approx. 4 hours.
