  • 0.5 tbsp oil for frying
  • 300 g gnocchi
  • 1 courgettes, cut into approx. 5 mm slices
  • 100 g baby spinach
  • 30 g butter
  • 2 tbsp pine nuts

  • Heat the oil in a non-stick frying pan. Fry the courgette for approx. 10 mins., turning occasionally, then remove. Fry the gnocchi in the same pan for approx. 5 mins., add the spinach, pine nuts and courgette, cook for approx. 5 mins., then plate up. Melt the butter in the same pan until it turns frothy and tastes nutty, drizzle over the gnocchi.
  • Tip:

    Sprinkle with a little coarsely grated pecorino romano.
