Ingredients

  • 1 dl milk
  • 1.5 tbsp. instant coffee
  • 1 dl full cream
  • 4 tbsp. sugar
  • 2 eggs
  • 1 egg yolk

Instructions

  • Bring the milk, cream and coffee powder to the boil, remove from the heat. Stir together the sugar, eggs and egg yolk, gradually add the coffee mixture, stirring constantly. Pour the mixture through a sieve into a measuring jug and pour into the prepared moulds, covering each foil.
  • Cook in a bain-marie: Transfer the moulds to a cloth in an oven-proof dish. Fill with boiling water to 2/3 the depth of the moulds, cook for approx. 35 mins. in the centre of the oven preheated to 160°C. Remove from the oven, allow to cool. Cover and leave to chill for approx. 2 hrs. Evenly spread 1 tbsp of sugar on each of the cremes, carefully caramelize with a blowtorch.
