Ingredients

  • 100 g red kidney beans (getrocknet), ca. 12 Std. eingeweicht, abgetropft
  • Water, boiling
  • 1 red onion, coarsely chopped
  • 1 red pepper, cut into cubes
  • 1 yellow peppers, cut into cubes
  • 200 g feta cheese, cut into small cubes
  • 1 bunch flat-leaf parsley, coarsely chopped
  • 3 tbsp. olive oil
  • 4 tbsp. balsamic vinegar
  • 0.75 tsp. salt
  • a little pepper

  • Boil the beans in water for approx. 40 mins. until soft, drain.
  • Mix the beans and remaining ingredients including the oil, season.
