  • 100 g butter, soft
  • 100 g sugar
  • 3 egg yolk
  • 100 g dark chocolate, crumbled
  • 1 pinch salt
  • 3 egg white
  • 100 g ground almonds
  • 1 tbsp. white flour
  • Topping
  • 1 tbsp. lemon juice
  • 500 g red currants
  • 1 tbsp. Unigel gelling agent (approx. 15 g, gelling agent made from apple pectin)
  • 75 g sugar
  • 1 dl single cream
  • 2 tbsp. crème fraîche
  • cocoa powder
  • 1 tbsp. icing sugar

    Combine the butter, sugar and egg yolks in a bowl and mix well. Place the chocolate in a thin-sided bowl, suspend over the gently boiling bain-marie; the bowl must not touch the water. Melt the chocolate, stir until smooth and stir into the mixture. Beat the egg whites with the salt until stiff. Mix the almonds and flour, layer with the egg whites on the mixture and carefully fold in using a rubber spatula. Place the dough in the prepared tin. Bake for approx. 20 mins. in the lower half of an oven preheated to 180°C. Allow to cool a little in the tin.
  • Topping

    Bring the berries to the boil and reduce the heat. Add the lemon juice and Unigel and boil for about another minute, stirring constantly. Stir in the sugar and boil for approx. 1 min. until cooked. Divide the berries over the cake and allow to cool in the tin. Cover and leave to chill for approx. 30 mins. Using the whisk attachment on hand mixer, beat the cream, crème fraîche and icing sugar until frothy.
  • Presentation

    Remove the cake from the tin and cut into 10 squares. Shortly before serving, distribute the whipped cream over the currant cake slices and dust with cocoa powder.
