Dampfnudel Dumplings with Vanilla Sauce

  • 2.25 dl Water
  • 1 pack braided bread baking mix
  • 1 eggs
  • 3 tbsp. sugar
  • 60 g butter
  • 5 dl milk
  • 1 Vanilla pod, cut open lengthways cut open lengthways, seeds scraped out
  • 1 fresh eggs
  • 0.5 tbsp. Maizena cornflour


  • Place the baking mixture in a bowl, add the water, sugar, egg and butter, mix and knead to a soft, smooth dough. Cover and leave to rise at room temperature for approx. 2 hour until double in size.
  • Warm the milk in a pan with the sugar and butter. Stir until the sugar has dissolved and pour half into the tin. Shape the dough into 12 balls and place in the sauce. Cover and leave to rise again for about 30 mins.
  • Bake for approx. 20 mins. in the lower half of an oven preheated to 200°C. Remove, pour over the remaining sauce.
  • Finish off in the oven for about 10 mins.
  • Using a whisk, combine the milk and remaining ingredients and bring to the boil over a medium heat, stirring constantly. As soon as the mixture thickens, immediately remove the pan from the heat, stir for a further 2 mins. Pour the sauce through a sieve into a sauce boat and serve warm with the noodles.
