Dragon fruit smoothie
Ingredients
- Dragon fruit jelly
- 100 g blackberries
- 1 dl coconut water
- 1 dragon fruit peeled, halved
- 1 tsp agar-agar (morga)

- 15 lychees, prepared

- One square tin (approx. 25 cm), brushed with a little oil and lined with cling film 4 glasses, each approx. 200 ml

Dragon fruit jelly
Cut one half of the dragon fruit into slices approx. 5 mm thick. Remove the white flesh from the other half, set aside the pink outer layer. Puree the blackberries, the white dragon fruit flesh and the coconut water, transfer to a pan. Stir the agar-agar into the mixture. Bring the mixture to the boil, reduce the heat, simmer for approx. 2 mins. while stirring. Pour into the prepared mould, leave to cool for approx. 30 mins. Remove from the mould and cut into approx. 1 cm cubes. -
Smoothie
Use a melon baller to scoop out 12 balls from the dragon fruit. Puree the remaining flesh, the reserved pink outer layer, the lychees and the coconut water, refrigerate. Pour the smoothie into glasses, serve with the dragon fruit balls, slices and jelly cubes. -
Tip:
To prepare the lychees, peel and remove the skin using your fingers. Open the fruit, remove the stone.
