Ingredients

  • Dressing
  • 3 tbsp olive oil
  • 3 tbsp pesto verde (green pesto)
  • 5 tbsp white balsamic vinegar
  • a little pepper
  • 0.5 tsp salt
  • Durum wheat
  • 7 dl salted water, boiling
  • 300 g pre-cooked durum wheat (Ebly®)
  • Salad
  • 120 g rocket
  • 250 g strawberries, sliced
  • 125 g Mozzarellas di bufala campana (buffalo mozzarella), torn into pieces

Instructions

  • Dressing

    Mix the balsamic, oil and pesto in a bowl, season.
  • Durum wheat

    Place the durum wheat in the salted water, cover and simmer over a low heat for approx. 10 mins. until soft, drain. Add the durum wheat to the dressing while still slightly warm, mix.
  • Salad

    Add the rocket and strawberries, mix. Serve the salad topped with the mozzarella.
