Ingredients

  • 2 tbsp olive oil
  • 1 lime, rinsed with hot water, dabbed dry, use grated zest and juice
  • 0.5 tsp salt
  • a little pepper
  • 120 g edamame (e.g. Karma), rinsed, drained
  • 1 mangoes, diced
  • 0.5 cucumber, diced

Instructions

  • Combine the oil, lime zest and juice in a bowl, season. Add the edamame, mango and cucumber, mix together.
  • Tip:

    Mix ½ bunch of roughly chopped coriander in with the salad.
