  • 1 dl coconut milk
  • 1.5 tbsp. sugar
  • 2 tbsp. Maizena cornflour
  • 20 g butter, soft
  • 2 fresh egg yolks
  • 3 passion fruit (approx. 240 g), scooped out
  • 50 g coconut flakes
  • 2 tbsp. coconut liqueur (e.g. Malibu)
  • 2 fresh egg whites
  • 1 pinch salt
  • 0.25 tsp. baking powder
  • icing sugar to dust

  • Combine the coconut milk, sugar and cornflour, mix well and bring to the boil, stirring constantly. Leave to cool. Add the butter and the remaining ingredients with the liqueur and mix well. Beat the egg whites and salt until stiff. Add the baking powder and sugar and briefly continue to beat. Carefully fold in the beaten egg whites. Divide the mixture into the moulds.
  • Bake for approx. 25 mins. in the lower half of an oven preheated to 180°C. Remove the cakes, dust with icing sugar and serve immediately.
