Fabada (Spanish bean stew)
Ingredients

- 250 g white beans (dried)
- Stew
- 0.5 tbsp olive oil
- 1 onions, finely chopped
- 2 garlic clove, finely chopped
- 1 bay leaf
- 1 litre water
- 400 g chorizo, cut into slices approx. 1 cm thick
- 200 g smoked boiled bacon, cut into slices approx. 1 cm thick
- 0.5 tsp paprika
- 200 g smoked ribs, cut into slices approx. 1 cm thick
- some saffron threads

Beans
Soak the beans for approx. 12 hrs. -
Stew
Heat the oil in a wide pan. Sauté the onion, garlic and bay leaf. Drain the beans, add to the pan and cook briefly. Pour in the water, bring to the boil. Reduce the heat, cover and simmer for approx. 1 hr. Remove the lid, add the chorizo, simmer for a further 30 mins. Add the bacon and all the other ingredients, simmer for approx. 30 mins. until cooked.
