Ingredients

  • Chickpea patties
  • 100 g fine polenta
  • 0.5 mangoes, cut into chunks
  • 2 tins chickpeas - 2 tins chickpeas (approx. 400 g each), drained, rinsed
  • 2 garlic, pressed
  • 0.5 tsp cumin
  • 0.75 tsp salt
  • 1 tbsp flat-leaf parsley, finely chopped
  • 0.5 bell pepper, diced

Instructions

  • Chickpea patties

    Roughly puree the chickpeas and mango. Mix the polenta with all the other ingredients, knead well by hand until the ingredients have combined to form a compact mass. With wet hands, shape the mixture into 6 burgers.
  • Grill the peaches

    Charcoal/gas/electric grill: Grill the falafel burgers over/on a medium heat (approx. 200°C) for approx. 4 mins. on each side.
