  • Couscous
  • 100 g couscous
  • 1.5 dl water, boiling
  • 0.25 tsp salt
  • Salad
  • 2 peaches, sliced
  • 3 tbsp olive oil
  • 3 tbsp white balsamic vinegar
  • a little pepper
  • 50 g rocket
  • 0.25 tsp salt
  • 100 g feta, diced

  • Couscous

    Mix the couscous and salt in a bowl. Pour boiling water over the couscous, cover and leave to absorb for approx. 5 mins. Separate with a fork.
  • Salad

    Heat the oil in a non-stick frying pan, fry the peaches for approx. 3 mins. on each side. Whisk together the oil and balsamic in a bowl, season. Mix the feta, rocket and couscous with the dressing, plate up with the peaches.
