Fig and Orange Gratin with Port

  • 100 g dried figs, finely chopped
  • 60 g butter, soft
  • 0.25 tsp. baking powder
  • 50 g cavallucci (biscuits)
  • 1 organic orange, use grated zest and juice
  • 3 tbsp. port wine
  • 3 tbsp. white flour
  • 2 tbsp. sugar
  • 1 pinch salt

  • Simmer the figs in the port in a small pan with the orange peel and juice for approx. 6 mins. until soft. Stir in the butter, set aside. Using a fork, work the flour, sugar, baking powder, salt and butter into a crumble. Mix in the Cavallucci. Place half of the crumble in the prepared moulds, arrange the reserved figs on top, top with the remaining crumble.
  • Bake for approx. 20 mins. in the centre of an oven preheated to 190°C.
