Ingredients

  • Filling
  • 200 g Appenzeller cheese, coarsely grated
  • 8 wheat tortillas
  • 1 mozzarella (approx. 150 g), cut into pieces
  • 1 spring onion incl. green part, cut into thin rings
  • 100 g cherry tomatoes, sliced
  • 1 tbsp coriander, finely chopped
  • salt and pepper to taste
  • Charcoal/gas/electric grill
  • 1 lime, cut into wedges
  • a little coriander, torn

Instructions

  • Filling

    Spread the cheese over 4 tortillas, top with the cherry tomatoes, spring onions and coriander, season. Place the remaining tortillas on top.
  • Charcoal/gas/electric grill

    Cover and grill over/on a low heat (approx. 180°C) for approx. 2 mins. on each side. Serve the lime wedges and coriander with the tortillas.
