  • 1 fresh eggs
  • 1 tbsp. mustard
  • 100 g cornflakes
  • 1 bunch parsley
  • 1 bunch thyme
  • 1 tsp. salt
  • a little pepper
  • 1 tbsp. olive oil
  • 600 g skinned whitefish fillets


  • Fillet the fish, roughly chop and mix with cornflakes, egg and mustard. Finely chop the thyme and parsley, add and season. Knead the mixture well until the ingredients form a compact mass that no longer sticks to your hands. With wet hands, shape the mass into 12 small cakes. Fry the cakes in batches in hot oil over a medium heat for about 4 mins. on each side.
